The Roasted Grapes Crostini makes for a beautiful lunch or as a stunning appetizer.
The beauty of this recipe is that you can make it for as many or as few friends and family as you need to and flavor it the way you love. But no matter how much or how you end up preparing it, Enjoy!
2 cups of Seedless Grapes (more depending on how many to serve)
3 – 4 Tbls Olive Oil, plus extra to drizzle on bread
Pinch of Kosher Salt (Sea Salt or Himalayan Salt are also good)
1- 2 tsp Honey
3 – 4 sprigs of fresh Thyme (or ½ tsp dried Thyme)
1 – 2 Tbls (per slice of bread) of fresh Ricotta Cheese
Multi-Grain Baguette (or your favorite rustic loaf), cut into ½ inch slices
1 large Garlic Clove, peeled and cut in half
Preheat oven to 450F. Drizzle 1 Tbls of Olive Oil on baking sheet.
Remove Grapes from stems and place on prepared baking sheet.
Drizzle remaining Olive Oil over Grapes and sprinkle with a pinch of Salt.
Drizzle with Honey and Toss to coat.
Lay Thyme sprigs over Grapes.
Roast Grapes in the middle of the preheated oven for about 12 – 18 minutes or until soft to touch.
In the meantime, prepare ½ inch bread slices.
Lightly drizzle with Olive Oil on both sides.
In a stove top griddle or indoor grill, toast bread on medium heat until golden marks are formed and it is perfectly toasted to your liking on both sides.
Once the toast is ready and while still warm, give each slice (on one side only) 2 – 3 rubs across with the cut side of the Garlic Clove. Set aside.
By now the grapes should be ready. Remove from oven to cool for a minute.
Now assemble your Crostini.
With the garlic side of toast, top with 1 – 2 Tbls of Ricotta Cheese. Top with a spoonful or two of the Roasted Grapes and continue until toast and grapes are all used.
Can sprinkle a few fresh Thyme leaves over top if desired or toasted Pine Nuts.
Serve immediately while warm.
Note: The amount of servings for this recipe is easy to adjust, you can decrease or increase accordingly to number being served allowing approximately ½ Roasted Grapes per serving. The amount given above, served 2 GENEROUS portions per person for 3 people as a light dinner.
